Which desktop or WM most resembles the old Mac (classic) mode? I realise I can't wish for a one-button mouse...

I don't know of a desktop environment that resembles Mac by default (that doesn't mean there isn't one) but I know that KDE can be customized to resemble Mac. You might be able to do the same thing with XFCE but I haven't used it much so I'm not sure about it.
