I am trying to change the display resolution but it won't go any higher than 1024x768 at 61 hertz. I have already tried running vxconf and it does appear to edit the xorg.conf file, but the desktop settings won't let me go beyond 1024x768 to the 1280x1024 that I specified in vxconf. Any suggestions?

Try editing xorg.conf, change the line:
DefaultDepth   24
to:
DefaultDepth   16
