As herpy was saying, you are going to have to look for Linux alternatives for each windows program you want to run. In most cases like with photoshop, there is a viable alterantive, in this case the gnu image manipulation program or GIMP. iTunes, is a different case, because it's a store as well as an ap and locks you into it's own proprietary codec, you may have to run something like that under wine.
If your music collection is in mp3 format already, there are dozens of viable music players, exhail, banshee, amarok, clemintine, you could try.
