I'm very happy with http://www.lighttpd.net/.
* Light (I ran several when developing web apps)
* Very simple configuration

Monkey works nice and is in the repositories.  I have Edna running all the time for my music server.  It's a very simple Python script and I've had it running flawlessly for years.

We've been using thttpd for some time now at work, nice and simple to set up and very light on resources.
