One of the funniest things about it is that there is some truth to it ... chili in Texas (along with Tex-Mex food in general) can be very powerfully spicy.  I had an uncle from Texas (since deceased) for whom it was a point of pride that he could eat the hottest (=spiciest) thing you could find, no matter what.  For me, just looking a jalapeño pepper makes my eyes water and my stomach start to hurt (and I like spicy food!).

Jalapeño peppers are actually pretty mild imo. I eat them raw.

Where I come from, the competition is usually who can drink the strongest moonshine. So you have a bunch of testosterone filled alpha males chugging down glasses of raw alcohol, trying to pretend it doesn't affect them. With repeated exposure, your tolerance grows. I'm not sure that's a good thing.

Here's what I think is frightening: a teetotaling Germanic stereotype. That would be really, really scary.
